Smoky Leek and Cheese Flan
A Recipe from the Mill St Deli

9” pastry case
Use white, wholemeal or shop bought short crust pastry)

Filling
2 large leeks
25g butter
large pinch hot paprika
large pinch nutmeg
3 free range eggs
75ml milk
75ml cream
large pinch salt

Slice and clean leeks.
Melt butter and saute leeks until tender.
Season with paprika and nutmeg, then cool.
Whisk eggs ,milk, and cream together.
Sprinkle half of cheese over base of flan.
Spread the leeks on top and sprinkle with remaining cheese.
Pour egg custard into flan case.
Bake at gas mark 6 (200c) for about half an hour until risen and golden.
Serve warm or cold.
